Rosie was born on June 2, 1953 in Scottsbluff, Nebraska to Augustine and Juanita Castillo. She grew up in Scottsbluff where she graduated from high school. Rosie married the love of her life, Demetrio Jimenez, August 1972. She will be remembered as a loving person who was always willing to open her heart to anyone in need.
She was preceded in death by her parents, her husband, a sister Mary C. Islas and a brother Paul Castillo.
Survivors include her children, Carlos Jimenez and wife Betty, Denise Jimenez, Michelle Jimenez and husband Javier Arambula, Michael Jimenez, Chelsi Garcia and Anthony Jimenez and wife Kristina ; grandchildren, Brandon Jimenez, Dillon Martinez, Issac Jimenez, Sebastian Jimenez Ramos, Carlos Jimenez Jr., Manuel Jimenez, Nathaniel Rodriguez, Blake Arambula, Javier Arambula Jr., Natalie Reyes, Zoe Reyes, Esamae Reyes, Demetrio Jimenez III, Rozae Jimenez and Penelope Jimenez and two great grandchildren.
